West Coast Meets West Coast: Tourism Western Australia brings the best of the South West to Malibu

Last week, Malibu Beach Inn’s Carbon Beach Club hosted a spectacular dining event that transported guests straight to our western coast of Australia. The exclusive “West Coast to West Coast” dinner series, presented by Tourism Western Australia, ran from Thursday, June 13 to Sunday, June 16, 2024.

In this unique collaboration, our very own Cape Lodge esteemed Head Chef, Adam Robson Chew, joined forces with Carbon Beach Executive Chef, Joshua Balague, to craft a five-course menu that beautifully married the flavours of both, Western, regions. This event offered a rare opportunity to indulge in a culinary experience where the bounties of the Indian Ocean met the Pacific, creating a seafood-forward feast that delighted and surprised attendees.

The Chefs:

  • Adam Robson Chew – Cape Lodge’s renowned Head Chef, brought his expertise from Margaret River, Western Australia’s celebrated wine region.
  • Joshua Balague – The talented Executive Chef of Malibu Beach Club, known for his innovative approach to coastal cuisine.

The Menu:
Guests enjoyed an exquisite menu featuring:

  • Spot Prawn Carpaccio with heirloom tomato and spiced watermelon
  • Razor Clam Linguine with green shallot
  • Monkfish with mussel béarnaise sauce
  • Salted Macadamia Cake with nectarine and blood plum granita
  • A selection of local cheeses paired with premium Western Australian wine

Wine Pairings:

To complement the exceptional dishes, Robson Chew and in-house Sommelier, Sofia Giros, curated wine pairings from some of Margaret River’s finest wineries. These wineries, known for their distinctive flavors and award-winning wines, provided a perfect match to the culinary creations.
